‘We should make our own Gin’

Coombes Club EST 2020

Gin Lovers and Moment Makers

Hi, we are Tilly and Steve and welcome to the ‘Coombes Club’ a small batch, hand crafted, copper pot distilled gin made in Buckinghamshire.

A crisp, fresh juniper forward gin with a citrus finish. A quaffable gin we think!

Meet Steve, Mr Coombes who you can normally find planning our next adventure whilst Talissa, Mrs Coombes, is finding all the hot spots to eat and drink in. When it comes to choosing your tipple in the pub a question we always ask is ‘what’s the local? A gin is rarely on the list. And so… ‘The coombes Club’ journey started. We wanted to create a gin to give you the choice to drink local, to know that it has been hand crafted with our carefully selected botanicals. In September 2020 this was just a dream by April 2021 we had created the perfect crisp, fresh and clean gin that looks as good as it tastes. Coombes Club a quaffable gin.

Buckinghamshire Dry

So what goes into making our Buckinghamshire Dry Gin? The Original!

Its crisp, its fresh, and you can taste the citrus.

We start by hand peeling a lot of Grapefruit, if you give the gin a good sniff, you’ll be met with a nice whiff of this. We then hand peel even more limes which adds to that light fresh kick you get on the fist gulp. We also add dried orange peel, and lemon peel to keep the citrus flavour pushing forward right behind the juniper, after all it is the juniper that makes the gin, Gin. Some rosehip and hibiscus help add a slight floral sweetness but not too much as we don’t want to overpower the dry finish. It wouldn’t be a dry gin if we didn’t add a little coriander and angelica root.

We distil in a large copper pot still, a traditional method and quite simply the best in our opinion. The copper is exceptionally good at conducting heat so when heat is dispersed evenly over the surface of the still the result is a more efficient process. Its also pretty clever as copper helps produce a naturally clean and smooth gin as it helps strip out volatile sulphuric compounds as the gin distils. Pretty neat hey!

Sloe and Orange

The latest addition to our club, is our all new Sloe and Orange gin. We spent most of 2021 meeting fellow gin lovers and it became apparent that you wanted more. With winter on the way and a history of enjoying sloe gin we set out to make our own.

We listened…You said you wanted full strength sloe gin. We wanted to create a sloe gin that still tastes like ‘gin’. At 38% its punchy but the sloe and orange comes through perfectly giving it that warming winter feel.
